Locked in a seesaw battle, the Knights pushed ahead with Timanu Alexander and Hoy crossing the white stripe.
While the Bears desperately fought on with Mason McCarthy crossing, a Dylan Lucas try and Bayden Searle goal saw the the Knights go into the break ahead 24-8.
The Bears started the second half in fine fashion, laying on back-to-back tries with Corey Fenning and Jubilee Soloa crossing.
Hoy took the wind out of their sails when he darted across the line in the 45th minute to turn the tide before Brandon Russell added his name to the score sheet.
Hoy then secured his triple.
The Knights had 56 percent of possession with a 73 percent completion rate to the Bears’ 71 percent completion for a final score of 40-20.
